Tokyo To Portland

We are proud to open our first location outside of Japan. Reasons abound for us to introduce our style of ramen to the Rose City, however Portland offered us something no other US city could;  soft water from a pure source within close proximity.

Much like Mt. Hood, the Afuri mountain in Japan has long been revered as a sacred place of harvest; the unique geography creates ideal spring water, perfect for ramen making. 

Portland’s ecosystem produces nearly identical beautiful water to that of our Japan locations. This water quality combined with the bounty of Pacific Northwest local farms & producers, allows us to create the highest quality ramen and Japanese cuisine available.

We consider each of our ingredients as carefully as our water source, using only the freshest, highest quality locally farmed ingredients.

Our specialty is Yuzu (citrus) style ramen. Combined with your choice of Shio (salt)  based broth, the Yuzu balances the richness and flavors of the soup, and lifts, lightens and brightens for the perfect ramen.

DELICATE AND COMPLEX

Our menu centers around our signature bowl of Yuzu Shio Ramen; a light-colored broth built upon a reduction made from dried seafood, seaweed, an assortment of salty ingredients, citrus notes of yuzu, and plenty of Umami. Our kitchen all of our ramen using the same techniques employed in our Nanasawa Atsugi, Kanagawa Prefecture or “central kitchen” at the foot of Afuri mountain.

Ramen is just the beginning. We offer a variety of traditional Japanese hot and cold dishes, and our Irori and Robata is the only grill of its kind in the United States.

Pick-Up Catering 

We require 48 hour advance notice for all pick-up catering orders (72 hour advance notice if picking up on Monday). We offer delivery within the Portland Metro Area for orders that meet a minimum purchase balance of $300 for an added 5% delivery fee.

Off-Site Delivery Catering 

For off-site catering orders we require 3 days advance notice, and the order must meet a minimum $300 purchase balance. A 50% deposit payment is required at the the time of final order booking. We charge a 5% coordination fee, a 5% delivery fee, and a 10% service charge fee which goes directly to the chefs preparing the order. 

Full Service Off-Site Catering 

For full service off-site catering orders we require 2 weeks advance notice, and the order must meet a $2,500 minimum purchase balance. A 50% deposit payment is required at the time of final order booking. We charge a 5% coordination fee, a 5% delivery fee, and a 20% service charge fee which goes directly to the chefs preparing the order. Any open bar package requires one highly skilled craft bartender for every 50 guests at a rate of $250 per bartender. We also offer the option to have a personal chef prepare food at your location for $200 per hour, per chef. One chef is required for every 50 guests. We will provide the sushi bar, hand roll bar, and/or robata bar equipment for the complete private chef experience.
